Local veggie dish

Mama Sita’s presented appetizing vegetable dishes at the Sikat Pinoy National Food Fair held recently at the Mega Trade Hall in a bid to emphasize the need for cooking more healthy dishes. 

Mama Sita’s showcased delicious and nutritious examples of home-cooked meals, such as sitaw guisado, kare-kareng gulay, and barbecue salad, in their seven-day menu incorporating various locally available vegetables. The menu was designed to encourage families to include more vegetables in their daily meals for a healthier lifestyle.

Mama Sita’s Kare-Kareng Gulay

Cooking time: 12 mins. | Serves: 3

Ingredients: 

1 pc sliced eggplant

12 pcs sitaw, cut into two-inch lengths

¼ cup sliced banana heart

4 pcs pechay

2 cloves crushed garlic

1 pc sliced red onion

1 pouch Mama Sita’s Kare-Kareng Gulay Mix (dissolved in ½ cup water)

1 tbsp cooking oil

½ cup water

bagoong

Procedure:

1. In a pan, heat cooking oil and fry eggplant. Set aside.

2. In a separate saucepan, heat cooking oil and sauté garlic and onion.

3. Add sitaw and banana heart. Stir for 30 seconds.

4. Add water then the pechay stems. Bring to a boil.

5. Pour the dissolved Mama Sita’s Kare-kareng Gulay Mix. Stir. Boil and let it simmer for two minutes.

6. Add the pechay leaves. Stir and continue simmering until the sauce thickens.

7. Add the fried eggplant. Stir and simmer for one minute.

8. Serve with rice and bagoong.

The Agriculture department, Central Square, and SSI Group partnered with the Embassy of Spain to showcase the world-famous Spanish flavors side by side Filipino produce and ingredients.

The three-day gastronomic market and festival, dubbed “Philippine Harvest meets Sabores de España,” featured time-honored Spanish staples such as olive oil, sausages, jamon iberico, and wines from 15 exhibitors. Meanwhile 25 exhibitors from the Philippines showcased the country’s diverse agricultural products, including organic heirloom rice, artisanal chocolates, coffee, fresh fruits and vegetables. 

“With Philippine Harvest, we give our customers another opportunity to enrich their appreciation of the culinary tradition of both our country and of Spain, as well as recognize the men and women behind the different varieties of food products,” said SSI Group president Anthony Huang.
