Philippine Culinary Cup 2019 highlights Filipino talent

The recently concluded 10th Philippine Culinary Cup, the country’s most prestigious culinary competition, featured hundreds of aspiring and seasoned chefs who showcased their talents on plates. 

City of Dreams Manila’s chefs took home 32 medals in 13 categories. 

Twenty-three-year-old Rier Franco and 25-year-old Jomari Miranda headlined the list of winners, bagging gold medals in the Young Chefs Team Challenge category. Their win has made them eligible to compete at the 2019 Shanghai International Young Chef Cup to be held at Shanghai New International Expo Centre on Nov. 12-14.

Along with Franco and Miranda, City of Dreams Manila’s other stellar chefs who won gold medals included Javier Honofre, Guk Cho “Peter,” and Drigo Lim in the US Potato, Pasta, and Creative Breakfast categories, respectively.

Silver medalists were Allan Delos Santos, Carol Maximo, Drigo Lim, Jerald Bulaong, Jelord Advincula, Kathleen Magaoay, Rier Franco, Loui Sabino, Darylle Tamago, Mary Grace Gajol, Jeffrey Casauau, Aaron Laroga, and Jemaico Zurbito in six categories: Pasta, US Beef, Dream Team Challenge, Sous Vide, US Beef, and Filipino Challenge.

On the other hand, Herbert De Leon, Francis Ivan Tabilog, June Ian Lovino, Trisha Embradura, Nerissa Perez, Yong Iin Chua, Julius Javin, Kevin Raymundo, Maureen Servo, and Elbert Maranan took home bronze medals in seven categories: Filipino Challenge, US Lamb, US Pork Chinese Style Cooking, US Poultry, Dress the Cake, French Touch, and Creative Breakfast. 

“We couldn’t be prouder of our chefs who showcased exemplary talent in a well-respected culinary competition. This recognition is a testament to the immense skills of our culinary team, who also acts as the driving force in making City of Dreams Manila a dining destination,” enthused Kevin Benning, City of Dreams Manila’s chief operating officer.

F1 Hotel Manila’s culinary team’s unique approach helped them bag the gold medal in the Filipino Cuisine Category. 

The team presented dishes inspired by the regions in the Philippines, and cooked using a variety of ingredients and techniques. 

The first dish, Imbaliktad, which originates from Ilocos, was made of beef cooked in local herbs and the region’s famous sukang Iloco. Sinigang na Pata sa Catmon ug Dilang Baka is a crispy pork knuckle dish braised in sour broth mixed with edible cactus. A tropical fruit called katmon intensified the flavor of the dish.

Another favorite was Utan Ala Piyangang which stews vegetables in coconut juice along with burnt coconut, creating the smoky flavors in the dish. The last dish presented—a personal concoction of Executive Chef Angelo Timban—was Sangag na Kan-on sa Bubok Itum, a local style fried rice with Sarawak dried shrimp. 

These wining dishes will soon be available at F All Day Dining Restaurant.
