Peruvian chef Carlo Huerta Echegaray brings the flavors of his home to Samba’s weekday lunch offering.

Ceviche De Norteno

The menu highlights an array of Latin flavors from appetizer to dessert.

Starter is a playful twist on the favorite Peruvian appetizer, Ceviche De Norteno that is made of choice seafood of the day marinated in Leche de Tigre with red onions, corn, and glazed sweet potatoes. It is followed by a filling main of Mero a La Chiclayana highlighting char-grilled red grouper fillet topped with cilantro, aji amarillo, chichi de jora, aji panca with paprika sauce, and Camote fries.

Rain Forest

A luscious finale inspired by the region’s natural landscape is the Rain Forest made of decadent Peruvian chocolate mousse, berries sorbet, chocolate logs, and flower dust.

The set menu is available from Monday to Friday, from 11:30 a.m. to 2:30 p.m. at Samba on the 8th floor of Shangri-La at the Fort Manila.
