Mediterranean menu by Chef Luis Chikiamco

In the most recently held Maya Kitchen Culinary Elite Series, Discovery Primea’s Executive Chef Luis Chikiamco brought with him a delicious menu inspired by Mediterranean restaurant Tapenade and his most practical tips for gourmet cooking at home. 

Aspiring cooks gathered together at the Maya Kitchen to learn straight from a culinary great. As the Executive Chef of Discovery Primea, Chef Luis creates the finest and most sumptuous dishes. And all participants were excited about having the chance to take a glimpse at some of his Tapenade-inspired favorites.  

Showcasing the bold flavors of the entire Mediterranean region—Spain, Italy, France, Greece, Turkey, and Morocco—Restaurant Tapenade has been a definite crowd pleaser for its incredible range of flavors and dishes: from handmade pizzas to lamb kebabs, from rib-eye steaks to tagines, and more.

For the Maya Kitchen Culinary Elite Series, Chef Luis brought a Tapenade-inspired menu, which the participants can recreate at home. He began his demonstration by showing how to put together a light and easy Melon and Mozzarella salad. This was followed by how to perfectly cook a medium-to-medium-rare Ribeye Steak “Tagliata” and a hearty Spaghetti Alla Gricia. The last dish of the demonstration was a flavorful Arroz Caldoso with assorted seafood. 

After the cooking demonstration, all the participants were able to taste and enjoy Chef Luis’ creations. More than just learning new recipes, the participants gained valuable insights from Chef Luis himself who believes that everyone can cook well as long as they put their hearts into it. Chef Luis also puts value into programs like the Maya Kitchen Culinary Elite Series, because of the opportunity it brings to aspiring cooks.

 “A cookbook gives you tips and techniques, but when you try it out, it doesn’t always come out the same way,” shared Chef Luis. “Usually by seeing the cooking done in action, you understand the technique more.” 

The Maya Kitchen Culinary Elite Series features culinary greats like Chef Luis Chikiamco to share their original recipes, tips, techniques and personal stories. The Culinary Elite Series is open to everyone with a passion for cooking and who would love to learn straight from a professional.
